Classic Vinaigrette

We are slowly catching up with these recipes!
Recipe #21 was extremely easy to throw together, and will now become a staple salad dressing in our household. Feel free to completely make it our own, with whatever kind of salad tickles your fancy. For this time around, we used it with a simple kale and tomato salad.

Ingredients
- 1tsp Dijon or whole-grain Dijon mustard
- 2 tbsp red wine, apple cider vinegar or lemon juice (We used a but of vinegar and lemon juice)
- 6 tbsp of good quality extra-virgin olive oil
- 1/2 garlic cloves, pressed or minced
- Fine sea salt
- Freshly ground pepper
Directions
- Whisk the mustard and vinegar/lemon juice/ wine together in a small bowl
- Drizzle in the olive oil a drop at a time, and then in a slow, steady stream, whisking constantly to create a slightly thick and uniform dressing
- Whisk in garlic
- Taste, and season lightly with a pinch of salt and pepper
