Household Favourite Brownies

These are originally called "My Girl's Brownies", but after my husband claimed they may be "his favourite brownie ever", I've decided to change the name!


With only a handful of ingredients, they are incredibly easy to whip up, and are PERFECT for an after dinner sweet.
It doesn't look like a lot of batter since there's only 1/2 cup of flour, but fear not. It made just enough to fill a 9x9 pan!

Ingredients
- 10 tbsp unsalted butter, plus more for the pan
- 1 cup sugar
- 1 tsp pure vanilla extract
- 2 large eggs, chilled
- 1/2 cup cocoa powder
- 1/2 cup all purpose flour
- 1 generous pinch of sea salt
- 1/2 cup toasted walnuts (optional. I didn't use them)
- 1/4 cup 80% dark chocolate, finely chopped (also optional, but I added this in)
Directions
- Preheat the oven to 325 degrees F.
- Lightly butter a square pan (9x9)
- Line the pan with parchment paper, enough to have some hanging over the side
- Cream the butter and sugar together with an electric mixer until light and fluffy, about 2 minutes
- Add the vanilla and eggs, and mix to combine
- Add the cocoa, flour and salt, and stir to bring together, stopping to scrape the bowl as needed
- Lightly stir in toasted walnuts and chopped chocolate with a spatula if you are using either
- Transfer the batter to the prepared pan and bake until the top cracks and a toothpick inserted into the centre comes out moist, but not too gooey (About 30-35 minutes depending on the oven)
- Transfer to a wire rack to cool
- Cut into 9 to 12 bars, and serve warm or cool. Either way is delicious!
