Chocolate Chia Seed Pudding

For all you foodies who are constantly rushing around in the morning, trying desperately to make it into work in time, this recipe is for you!

I've been debating wether I should post this or not since my photo-taking skills were NOT on point, and these pictures don't do this breakfast justice. But it's so delicious and so easy to whip together I said, "to hell with it!".

This dish keeps you going for the whole morning. For those who are chia seed fans - make this immediately! For those who are unfamiliar with them, chia seeds are packed full of fabulous things such as protein, Omega 3 fatty acids AND fibre.

Much like overnight oats, this dish is made ahead of time the night before with little effort, and is ready for you in the morning when you wake up to start the day. The chia seeds will become gel-like, and will have a texture somewhat similar to tapioca pudding.

Feel free to top it with anything and everything that satisfies your tastebuds!! For today I chose banana, raw pumpkin seeds, ground flax seeds, hemp hearts and strawberries.

Makes enough for 2 servings

INGREDIENTS

- 1 1/2 cups Almond Milk (I used Silk unsweetened vanilla)

- 1/3 cup chia seeds

- 1/4 cup cocoa powder

- 1/2 tsp cinnamon

- 1/4 tsp salt

- 1/2 tsp vanilla extract

- 3-4 tbsp maple syrup

Topping suggestions:

ground flax

pumpkin seeds, or any of your other favourite seeds

hemp hearts

your favourite fruit

DIRECTIONS

- combine all ingredients in a bowl except male syrup

- whisk all ingredients vigorously until all combined

- add maple syrup to sweeten to your liking

-place in fridge for at least 5 hours (preferably over night)

-serve cold with your favourite toppings
