Quinoa Cookies

That sounds like an oxymoron, doesn't it? I know what you are thinking. Quinoa doesn't belong in a cookie!
But it in this recipe.. it does. It really, really does.
This is one of my go-to cookie recipe.

The quinoa keeps these light and fluffy, and with coconut oil in them instead of butter, along with some greek yogurt thrown in there, you really don't feel bad eating 2, or 3, or 4....

INGREDIENTS
- 1 cup all purpose flour
- 1 cup old fashioned oats, ground (this only takes a couple of seconds in the blender)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 1/4 cup plain greek yogurt
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 tsp vanilla
- 2/3 cup light brown sugar
- 1 cup cooked quinoa, cooled
- 1/2 cup dark chocolate chips (I used mini since it was all I had, but you can use whatever you like best)
- 1/4 cup shredded coconut (optional)
DIRECTIONS
- Preheat oven to 375
- In a medium bowl, mix together flour, oats, baking powder, baking soda and salt
- In a larger bowl, whisk coconut oil and greek yogurt together well
- Stir in brown sugar until well combined
-Whisk in eggs and vanilla
- Mix in quinoa until fully incorporated
- Add in dry ingredients and stir until combined
- Add in chocolate and coconut, if using
- Drop scoops of about 1 1/2 tablespoons on a prepared baking sheet (lined with parchment, silicone or greased)
- Bake for roughly 10 minutes, or until lightly golden
- Let cool for a couple minutes before transferring to a wire rack
**Makes 20 cookies. You can make your cookies smaller to get a larger quantity**
