This dish is proof you can still have a grilled meal even when there's 3 feet of snow (literally) outside, and you have no use of your condo's backyard BBQ.

Panini Presses - Not just for Sandwiches!!!

I got this recipe from jocooks.com. It's for 4 servings, but I easily halved it. Marinate the fish ahead of time to ensure for maximum amounts of flavour. You can easily use filets of fish as well rather than steaks. If you do decide to use steaks, beware of those pesky little bones. I don't mind them, but if you are serving this to children you may prefer the filets.
If you are lucky and you are not experiencing a snowmageddon like us in Ottawa right now, feel free to actually use the BBQ!

Paired with rice and some simple steamed veggies and you have yourself a perfect meal. Enjoy!
Ingredients
- 4 salmon steaks
- 1/4 cup soy sauce
- 1/4 cup maple syrup
- 1tbsp sesame oil
- 1 tsp ginger, minced
- 3 cloves garlic
- 1/2 tsp crushed chili flakes
- sesame seeds and/or green onions for garnish (optional)
Directions
- In a shallow dish, whisk together soy sauce, maple syrup, sesame oil, ginger, garlic and pepper flakes
- Add salmon to dish and turn it around to get the glaze all over the steaks
- Cover with plastic wrap and let marinate for at least 2 hours
- Grill salmon on both sides (whatever your prefered grilling method. In the panini press with the lid closed it took roughly 10 minutes)
- As you are grilling, brush fish with the remaining glaze on each side
- Serve with desired garnishes and a side of veg and rice
