Apple Spice Muffins

This recipe was passed down to me from my Nanny after she passed away last year. The most vivid memories I have of her are ones that include kitchens, cookies and muffins.

It was always so exciting as a kid to see what she had in her cookie jar or baking in the oven on the day we came to visit.

I was given her "Giant Cookie Book", along with a ton of random recipes jotted down on scrap paper. That's where I found this recipe!

With chunks of sweet, delicious apple and hints of cinnamon and nutmeg, these muffins are great for when you are on the go.

Ingredients

- 2 cups flour

- 1/3 cup brown sugar

- 1 1/2 tsp baking powder

- 1 1/2 tsp baking soda

- 1 tsp cinnamon

- 1/4 tsp nutmeg

- 1/2 tsp salt

- 1 cup chopped apple

- 1 egg, slightly beaten

- 1 cup milk (I used 1%)

- 3 tbsp butter, melted

Directions

- Preheat oven to 400 degrees

- In a large bowl, combine flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt

- In a smaller bowl, combine chopped apple, egg, milk and butter

- Add wet ingredients to dry ingredients and mix until combined (don't overmix)

-Fill lightly greased muffin tins almost to the top

- Bake for roughly 15-17 minutes, or until golden brown and cooked through
