Pancake Tuesday!

I often wake up thinking about what I am going to have for breakfast that morning. I mean, who doesn't love breakfast?!?! It's the most important meal of the day, and often the most delicious. This morning I was extra-excited... it's Pancake Tuesday!!
I grew up hating pancakes. There was something about them that I really disliked. Nowadays, I'm still not a fan of traditional cookie cutter diner-style pancakes. After some experimenting and a lot of taste-testing though, I have managed to find a pancake that I absolutely LOVE.

I call these "Coconut Oil Oatmeal Pancakes".
Trust me, they are incredible.

These pancakes are really filling, and are packed with great ingredients like.. you guessed it.. coconut oil and oatmeal! They are easy to whip up, and can easily be eaten as left overs (either by keeping left over batter to make a later time or by popping already made pancakes into the toaster to re-heat).
The recipe makes about 8 pancakes, and is easily halved if you want a smaller portion.

You can top these beauties with pretty much anything you'd like. This is my personal favourite - bananas, dark chocolate chips and 100% pure maple syrup.
Ingredients
- 1/2 cup flour
- 1/2 cup rolled oats
- 1/2 teaspoon baking soda
- pinch of salt
- 3/4 teaspoon cinnamon
- 1 cup plain or vanilla yogurt
- 2 eggs
- 2 tablespoons room temperature coconut oil, plus more for cooking
- 2 tablespoons milk
Directions
- heat up some coconut oil in a pan at medium heat
- combine flour, oats, baking soda, salt and cinnamon together in a bowl, stirring to combine
- in a separate bowl, add yogurt and milk
- slightly whisk the eggs before adding to the yogurt and milk
- add coconut oil to wet mixture and whisk immediately to ensure it doesn't harden. Mix until smooth
- add wet ingredients to dry ingredients and mix together until combined
- add two spoonfuls of batter per pancake into pan
- cook about 3-4 minutes per side, until golden brown and evenly heated through
- serve with whatever toppings that makes your taste buds happy - and enjoy!
Makes roughly 8 pancakes
